JOB SUMMARY

Assists the Sous Chef in ensuring the quality, consistency, and production of areas of responsibility in the kitchen. Demonstrates culinary talents by actively performing tasks while leading the staff and overseeing all food-related functions. Collaborates with the team to enhance guest and employee satisfaction while adhering to the budget. Responsible for maintaining sanitation and food standards. Trains and develops the team to drive performance improvements.

CANDIDATE PROFILE

Education and Experience


• High school diploma or GED; 4 years of experience in the culinary, food and beverage, or related field.

OR


• 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related field; 2 years of experience in the culinary, food and beverage, or related field.

CORE WORK ACTIVITIES

Ensuring Culinary Standards and Responsibilities are Met


• Supervises the preparation and production of all hot or cold food items for buffet and a la carte menu to ensure compliance with prescribed recipes and specifications.


• Oversees kitchen shift operations and ensures adherence to all Food & Beverage policies, standards, and procedures.


• Maintains food preparation, handling, and storage standards.


• Identifies high-quality products, presentations, and flavors.


• Plans and organizes food quantities and plating requirements for the food operation (e.g., restaurant, banquet, pastry shop).


• Communicates production needs to key personnel.


• Generates production prep lists.


• Assists in devising daily and seasonal menu items.


• Ensures compliance with all relevant laws and regulations (e.g., HACCP, OSHA, ASI, and Health Department).


• Estimates daily restaurant production needs.


• Prepares and cooks a variety of foods on a regular basis or for special guests or events.


• Inspects the quality of raw and cooked food products to meet standards.


• Determines food presentation and creates attractive food displays.

Leading Kitchen Team


• Supervises and coordinates the activities of cooks and workers involved in food preparation.


• Utilizes interpersonal and communication skills to guide, influence, and motivate others; promotes sound financial/business decision-making; demonstrates honesty and integrity; leads by example.


• Leads shift teams, actively prepares food items, and fulfills requests based on specified requirements.


• Supervises and directs restaurant kitchen staff. Possesses a thorough understanding of employee roles to perform duties in their absence.


• Fosters mutual trust, respect, and cooperation among team members.


• Acts as a role model, exhibiting appropriate behaviors.


• Ensures and boosts employee productivity levels.


• Ensures employees are trained in various roles to support smooth daily operations.


• Ensures employees comprehend expectations and boundaries.


• Builds and maintains transparent, collaborative relationships with employees and ensures the team follows suit.


• Assumes the responsibilities of the Sous Chef in their absence.


• Assists the Chef in daily line-ups and conducts them in their absence.

Establishing and Maintaining Kitchen Goals


• Sets and facilitates the achievement of kitchen goals, including performance, budget, and team goals.


• Develops specific strategies and plans to prioritize, organize, and accomplish daily kitchen operations.


• Recognizes the impact of kitchen operations on overall property financial goals and objectives and strives to meet or exceed budgeted goals.


• Proactively investigates, reports, and follows up on employee accidents.


• Understands and implements company safety standards.

Ensuring Exceptional Customer Service


• Delivers services that exceed expectations for customer satisfaction and retention.


• Manages day-to-day operations, upholding quality standards and meeting customer expectations consistently.


• Enhances service by effectively communicating with and assisting individuals to comprehend guest needs, offering guidance, feedback, and personal coaching as necessary.


• Sets a positive example for guest relations.


• Highlights guest satisfaction in all departmental meetings and focuses on continuous enhancement.


• Empowers employees to deliver exceptional customer service.


• Addresses guest issues and complaints.


• Engages with guests to gather feedback on product quality and service levels.

Managing and Conducting Human Resource Activities


• Identifies the developmental needs of others and provides guidance, mentoring, or assistance to help them enhance their knowledge or skills.


• Trains restaurant staff on menu items, including ingredients, preparation methods, and unique flavors.


• Manages employee disciplinary procedures proactively.


• Participates in the employee performance evaluation process, offering feedback as necessary.


• Utilizes all available on-the-job training resources for employees.


• Assists as required in interviewing and hiring team members with suitable skills.

Additional Responsibilities


• Provides information to supervisors, colleagues, and subordinates through various communication channels.


• Analyzes information and assesses outcomes to determine the best solutions and resolve issues.


• Attends and contributes to all relevant meetings.
